I'm Freja Holm, a Copenhagen-based food writer. The Copenhagen Table is a small, independent blog I write on my own time about Alchemist — the restaurant, the philosophy behind it, and what it's actually like to book a table and sit through the whole five-hour evening as a regular, paying guest.

I want to be completely clear about what this site is and isn't. The Copenhagen Table is not affiliated with, endorsed by, or connected to Alchemist ApS, chef Rasmus Munk, or any restaurant group. I don't work for the restaurant, I've never received a complimentary meal from them, and nothing published here has been reviewed or approved by Alchemist before publication. I started this blog because most writing about Alchemist falls into one of two categories: press releases dressed up as articles, or a single restaurant review that doesn't have room to go deeper into the ideas the kitchen is working with. I wanted a place to write slowly about a restaurant that clearly rewards slow reading — the sourcing, the science, the booking logistics, the parts of the experience that don't fit into a star rating.

Everything here reflects my own opinions and experiences, or those of guests I credit by name where I've included them. I fund this blog myself; it isn't sponsored by Alchemist, any restaurant, or any booking platform, and I don't accept payment in exchange for coverage.
